Hiya!
So today I will share a recipe that has gotten rave reviews from my co-workers. I brought them in one day for a treat and everyone was quite impressed. I made these literally completely from scratch – I got inspired by the idea of a healthy rice krispy treat bursting will delicious seeds and bits, and of course I wanted to sneak some protein in there as well (typical). A little experimentation in the kitchen and voila! These are delish, loaded with raw nutrients, and only 100 calories per treat, so they make a great lil snack!
Krispy-licious Treats
(Raw, Vegan, Gluten-Free)
Ingredients (links are to actual branded ingredients I used):
- 3 cups brown rice puffs cereal
- 3 tablespoons lightly toasted sesame seeds
- 3 tablespoons chia seeds
- 1/4 cup cacao nibs
- 1/4 cup agave nectar
- 3 tablespoons brown rice syrup
- 3 tablespoons coconut oil
- 1 scoop Sun Warrior protein powder (I used “Natural”, I’m sure “Vanilla” would work also!)
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1/2 tsp cinnamon
Steps:
1. Mix together brown rice puffs, sesame seeds, chia seeds, and cacao nibs in large bowl. Set aside.
2. In microwave safe mug or bowl, mix together agave, brown rice syrup, and coconut syrup. If mixture is too thick and sticky, microwave for about 15 seconds and stir repeatedly until smooth and runny consistency is reached.
3. Into the liquid mixture, stir in the protein powder, vanilla, salt and cinnamon. It will now be cloudy and slightly thicker.
4. Pour liquid mixture into rice crisps mixture and stir until rice is completely coated and ingredients seem evenly distributed.
5. Now it is time to form your treats. You can do this any number of ways: you could grease a baking pan and dump these in, then cut them into servings when they are cooled. Or, you can be cool like me and make them in muffin tins. I liked my method because they became instantly portable and I didn’t dirty up any pans.
Note that these will not seem to stick together well at first – this is okay. They will firm up and stay together once cooled.
So what I did was I took a large sheet of plastic wrap and laid it into a muffin tin. Make sure there is plenty of extra wrap around the edges because it will bunch. I then dumped spoonfuls of the “batter” into each muffin, so that each cavity was about 1/2-3/4 full.
Once each cavity was filled up I laid another sheet of plastic wrap over the top and pushed it down on top of each treat, to compress the treat so that it would stick more and firm up better. I then repeated with my next muffin tin.
This should make about 14 round treats.
6. Place pan or muffin trays into refrigerator for at least one hour. Enjoy!
Note that once the treats have solidified, you can take them out of the muffin trays all together in their plastic wrap, and either cut the wrap between the treats so you have individual to-go treats, or just kind of fold them up so they are more compact. But store these in the fridge until ready to eat! If left at room temperature for too long the coconut oil will melt and they will become liquidy again and fall apart on you while trying to eat.
The chocolate and seeds add such great texture and crunch, and these treats have a slightly nutty-ness to them from the coconut oil and sesame seeds. These are perfectly sweet, not overly gooey and icky sweet like traditional rice treats! And loaded with healthy fats and antioxidants. Yummers!
